A reinvention of an English, Wensleydale/ Swaledale combination, made from our Heritage, Grass Fed "Milking Devon" cows rich, creamy milk. It has a natural coating of lard and has been aged 5 to 10 months in our cheese cave here on the farm. The texture is firm, slightly dry and the flavor is getting sharper, and smoother, as it ages. It is great at a warmer room temp. with fruit and white wine or grate it into a salad or cheese sauce.
