The ribs from the front of the animal, this is a very desirable cut of meat. It can be used for crown roasts/standing rib roasts, and may be frenched (the meat/fat removed from the rib-ends). The tender and flavorful chops from this cut are called rib chops (as opposed to loin chops) and have the characteristinc "lollipop" shape. They are also known as "lollipops".
