It is made with a mix of pork meats (cheek, head, throat and shoulder ), to which salt, herbs and seasoning are added and then it is stuffed into clean, cured front pig trotters from which the fat has been removed. The next step is drying followed by boiling, the removal of the outer layer of fat and then cooling. Next, the Zampone is pre-cooked (this version has replaced the tradition of selling the fresh product) and finally packed.
